Chinese •Spring rolls• with sweet sauce

Ingredients

  1. 1 tbsp oil
  2. 2 garlic gloves finely chopped or minced
  3. 400 g (ground pork)
  4. 1 large or 2 small carrot
  5. 11/2 white cabbage
  6. 5 cm piece of ginger
  7. 3 spring onion
  8. 1 tsp cornflour
  9. 2 tbsp soy sauce
  10. 10-15 Spring roll wrappers (I did it myself)
  11. Sweet and Sour Sauce (makes ~ 2/3 cup)
  12. 2 tsp cornflour/ cornstarch
  13. 2 tbsp water
  14. 1/2 cup apple cider vinegar
  15. 1 tbsp honey
  16. 1 tbsp ketchup
  17. 2 tsp soy sauce

Steps

30 min
  1. Heat oil in a skillet or wok over high heat. Add garlic, stir quickly, then add pork. Cook, breaking it up as you go, until it turns white.
     
     
  2. Add carrot, ginger onion and cabbage. Cook for 3 minutes or until vegetables are wilted. Add cornflour, soy sauce cook for 1 minute until the liquid is gone.
     
     
  3. SWEET and SOUR SAUCE: 
    Combine ingredients in a small saucepan over medium heat. Bring to simmer, stirring regularly, then simmer until it thickens to taste (about 3 - 5 minutes).
     
     
  4. Now take the spring roll wrapper. If you are using the wrapper recipe which i have posted.
     
     
  5. 1. Heat oil at the deep frying temperature 2. Gently sleed on spring rool, if the oil is not enough hot, than the spring rolls absorb oil and become soggy. 3. Depending on the size of the pan or kadai 4. Fry spring rolls till they are crisp and golden. 5. Drain fried spring rolls on kitchen paper towels to remove excess oil.
     
     
  6. Garnish with some chopped spring onion greens and serve with sweet sauce

 Ingredients




  1. For the spring roll sheets
  2. 1/2 Cup Maida
  3. 1/2 tsp Salt
  4. 1 tsp Lemon Juice
  5. For Stuffing
  6. 2 Cups Chopped Cabbage
  7. 1/2 Cup Grated Carrot
  8. 2 Chopped Julian Onions
  9. 2 Julian Chopped Capsicum
  10. 1/2 Cup Sprouted Moong
  11. 1/2 tbsp Green Chilli Paste
  12. 1/2 tbsp Ginger Paste
  13. 1 tbsp Garlic Paste
  14. 1 tbsp Soya Sauce
  15. 1 tsp Vinegar
  16. to taste Salt

Steps

20 minutes
  1. Take all the ingredients for Springroll sheets and make a dough with a little water like one of chapati.

  2. 2. Make small round balls like of Puris and then roll them to the size of Puris.

  3. Take One Puri and spread some oil on it.

  4. Take another Puri of the same size and press it over the first one.

  5. Roll it again to make a Puri larger than the average Puri size.

  6. Roast this bigger Puri on a pan for around 30 seconds.

  7. Separate and open both Puris quickly when hot to have crispy sheets.Repeat for all sheets and now your springroll sheets are ready.

  8. Take 1 1/2 tbsp Oil on a pan and add Garlic Paste,Julian chopped Onions and cook for some minutes on a fast gas.

  9. Now add Ginger Paste,Chopped Cabbage,grated carrot,sprouted Moong,Salt per taste and cook by tossing for 2 minutes.

  10. Add the Julian Chopped Capsicum,Green chilli paste,Soya sauce,Vinegar and mix on a fast gas.

  11. Alter the taste as per your taste and don't let it soften and keep it crispy.

  12. Your stuffing is ready.

  13. Once it cools down put it in the springroll sheets about 1/2 tbsp Stuffing.

  14. Take 2 tbsp Maida and add some water and make a batter.

  15. Stick the corners of the sheet as seen in the pictures.

  16. Give a springroll shape to it and fry them till crispy.

  17. Serve with Red Chilli Sauce or any preferred Soup.
